Puff pastry, also known as pâte feuilletée, is a flaky, light pastry made by repeatedly folding and rolling out the dough, applying a layer of butter or other fat between each thin section. In the oven, the gaps left by the melting fat become steam pockets that push the layers apart, yielding the deliciously crisp, airy and buttery final product. Warning: puff pastry is not for the casual chef. Chef Julia Child recommends 729 layers for pâte feuilletée fine!
