The Chimay Brewery was established in 1862 at the Trappist monastery Scourmont Abbey in Chimay, Belgium. In fact, Chimay was the first brewery to formally designate their ale as Trappist on the label and remains one of only thirteen beer breweries worldwide that produce authentic Trappist beer.
