All acorns contain varying levels of tannic acid which makes them taste very bitter. You need to leech out the acid before eating them. To do this first grind them up into small pieces. Next you can either soak them in a stream for several days or the quick method is to boil the acid out. Boiling them will require several changes of water. Keep taste testing them until the bitterness is gone and you are left with a pleasant nutty flavor.
