Grilling is also intensely hot, but the heat comes from below — either from briquettes, a gas flame, or a wood fire — and its temperature isn't as easy to control. Grilled food will frequently feature tell-tale "grill marks" and a smoky or woody flavor. Both methods require turning the food for equal cooking.
