Stewing is the tenderizing process of slow-simmering tough cuts of meat on the stovetop, covered in liquid, until the connective tissue breaks down and they are fall-apart tender. Diced vegetables such as carrots, onions, or celery may be added at first to give flavor, while additional chunks of vegetables, such as potatoes, onions, or carrots, may be added in the last half-hour or so of cooking. It is served in a bowl with the cooking liquid. Stewing can also be used for a single food, such as tomatoes or dried fruits.
