What causes freezer burn?
Answer It happens when water molecules escape and freeze on the food and oxygen takes its place.
If frozen food thaws even partly, water molecules can seep out to the surface, allowing oxygen to take their place. The water freezes as a chunky ice, further drying the surface. The oxygen that has migrated into the food may discolor the food and may change its flavor. If your food is not properly wrapped, that may also allow this condition to take place.
