This mascot of Delta State University is big, blueish, and - if you ask us - kinda ugly. Known as "quimbombo" in some Spanish-speaking culture, what vegetable is this mascot supposed to represent?

Answer Okra

Delta State University actually has two mascots: the official name, the Statesmen, and the unofficial one preferred by students, the Fighting Okra. The latter mascot grew from a feeling amount students that "Statesmen" wasn't particularly intimidating, so in the mid 1990s the students voted, with the result overwhelmingly in favor of Fighting Okra.
