The tarte Tatin is named after the Tatin sisters, or more specifically Stephanie Tartin, who attempted to make a conventional apple pie, but mistakenly left the apples in the sugar and butter for too long. In a rush to save the dessert, she layered the pastry base on top of the fruits and baked the pan. Ever since then, the Tarte Tatin has been one of the world's most delicious mistakes.
