Wheat that has been cracked or milled will last longer in the freezer than at room temperature, but wheat contains natural oils that can go rancid quickly after grinding, or milling, into a flour. You get a little longer life from cracked wheat, but for the longest shelf life, you should place the whole grain (wheat berries) in a five-gallon bucket with some oxygen absorbers and close it with an airtight seal. Store in a cool dark place.
