In the manufacture of chocolate, what causes a "chocolate bloom," a white coating you might find on your chocolate bar? (We just wanted to say chocolate three times!)

Answer Cocoa butter coming to the surface

There are actually two types of "chocolate bloom," one from cocoa butter rising to the surface and one from sugar. This tends to happen as chocolate ages and the fats or sugars separate.
